Prego Fudge




This recipe is still in the making so you will probably want to experiment with it to get it the way you like it.

I didn't realize it would be pregnant-friendly until after I made it-Carob is caffeine-free! So, if you are prego, absolutely can't have caffeine, and have an insatiable craving for chocolate, try this instead. I am a chocolate-lover, and this Carob Fudge could probably never take chocolate's place in my heart, but it is a great substitute and will hopefully satisfy your craving. It goes very well with a cup of hot carob.



You only need 3 things, and really the third is optional:

1. Carob Powder (maybe 1/3 cup?)
2. Agave Nectar (1/3 cup or more...or less? Experiment!)
3. Pistachios, shelled and chopped, or any other nut or dried fruit(optional)

You'll notice I don't have any measurements-sorry about that but I really don't know how I do it-I think it turns out a little differently every time. Just mix some together and taste-test as you go along. :)

Tips:

Carob does not absorb liquid easily, so this will take a little bit of doing. I find it easiest to put the powder in the bowl, then the agave, and blend/knead for about 5 minutes. It will start to look like little crumbles, but I promise it will come together eventually. If you find that it seems too dry, add more agave, not water.

Once you've got the powder and nectar mixed together into a thick fudge-like goo, mix the crushed pistachios in with it and form into rectangles, spheres, or whatever shape your heart desires! It's a messy job for your hands, but it's well worth the effort. Enjoy!
